CHIPOTLE AIOLI

 

 

INGREDIENTS:

 

  • 5 Eggs Yolks
  • ½ Can Chipotle Pepper In Adobe Sauce (To Taste For Spice)
  • ½ Cup Chopped Cilantro
  • 3tbsp Lime Juice
  • 1 Tblsp Kosher Salt
  • 2 Cups Extra Virgin Olive Oil
  • 2 Small Cloves Of Garlic

 

PROCEDURE:

 

  • Pulse garlic, salt, cilantro, chipotle and lime juice in a food processor
  • Add the egg yolks
  • When mixed up slowly drizzle in the olive oil in a steady stream until thick like mayo
  • Serve on top of fritters
